Today is Carrot Cake day, at least according to daysoftheyear.com . Carrot Cakes used to be made using carrots as sweetener because sugar was so expensive. That’s an idea I can get behind, carrots as a sweetener and sugar too expensive to use to excess. Instead of celebrating with a rich calorie laden piece of carrot cake, how about instead, a lovely crunchy salad featuring, wait for it, carrots, or perhaps a mid-morning snack of carrots. Did you know that eating carrots or other sweet vegetables early in the day is a great way to reduce late afternoon sweet cravings? In our house, the best part of carrot eating is watching the poodle eat one with it between his front paws, maybe he is channeling his inner rabbit. So, go enjoy some carrots, raw or cooked but skip the cake!
